I Love Thursday #130 – Abounding Blessings

No COVID-19. We are ever so thankful that no one we know has the virus. We had a scare when my niece shopped at a store where an employee tested positive. She self-quarantined herself for two weeks but showed no symptoms. Sue and I took ourselves grocery shopping complete with masks and gloves. I am thankful that I don’t have to wear a mask more often! We pray that this virus is on its way out and that you all stay healthy and safe.
Pineapple Upsidedown Cake! I really have been wanting to bake . . . like crazy. This week I tried a recipe that my mom used to make often. For the first time, I used my iron frying pan for this recipe. It turned out pretty darn good even though my middle-school self didn’t note what size can of pineapple to use!
FYI – I used a large can of crushed pineapple well-drained. The juice from the can easily filled one-quarter cup for the milk/pineapple juice combination. The cake came out of the oven nice and brown and I immediately ran a knife around the edge of the pan. After about 10-15 minutes, Sue flipped it out on the plate for me – I was nervous. Some of the pineapple/brown sugar stuck to the pan but I just scooped it out and stock it in place. No harm, no foul and it was delicious with some whipped cream on top.
Baby Colt is one month old already! My, time goes by so quickly. We haven’t been able to spend as much time with him as we’d like . . . but we will make up for that as soon as the pandemic is behind us. Here’s a Good Morning wish from Colt, and his first Easter picture.
Dominic and Addison had a wonderful Easter and they hope you did as well. Is there anything sweeter than finding an Easter basket in your jammies? Maybe following the trail of plastic eggs filled with a few M&Ms makes it all worthwhile. Then it was time to go to Gamma’s to find a few more eggs. Dominic easily found some to enjoy while Addison, decked out in her bunny suit (and matching shoes) also found one. Addison was happy to model her cute new Easter outfit with sunny yellow chicks on it.
Addison took offense when her brother wasn’t feeling the love for her new outfit, and encouraged him to change his mind. I’m not sure how a barefoot to the face worked. Fortunately, they were jumping on the couch and enjoying the mirrors in short order. Dominic helped his mom bake an Easter cake that looks yummy. Finally, it was time to “paint” with water to end a perfect day.
